Quick Cauliflower Rice

This recipe is a game changer! We made the general tso chicken slow cooker dish the other day and made it with this delicious cauliflower rice. You will not miss rice after making this! Freeze the leftovers and then just defrost an hour before you eat. It's possible to even make a variation with this recipe to make couscous. Talk about a food crush! The best part is that you don't have to squeeze out all the water of the cauliflower like when you make cauliflower pizza.


  • 1 head of cauliflower 
  • 1 tablespoon of extra virgin olive oil or coconut oil
  • 1 sprinkle of salt


  1. Cut the cauliflower in larger pieces
  2. Transfer cauliflower in food processor
  3. Pulse the cauliflower until broken down and place in large bowl
  4. Pull out the unprocessed bits (theres always one or two sneaky little buggers)
  5. Re-process any remaining pieces 
  6. Warm a tablespoon of your oil in a saute pan over medium heat. Stir in processed cauliflower and sauté with a sprinkle of salt. About 5-8 minutes
