Easy Vegan Banana Bread Granola

This is my new favourite recipe! It's the perfect dish to start or even end your day with. Whip up a batch when your bananas are soft enough to mush up. I made two batches a couple of weekends ago for some friends birthdays and placed them into mason jars. Click here for the original recipe however I've listed it below with my modifications.


  • 3 cups rolled old-fashioned oats (can also use gluten-free oats)
  • 3/4 cup of chopped walnuts
  • 1/2 cup of chopped pecans
  • 3 Tbsp of raw sugar
  • 1/2 tsp of salt
  • 1 Tbsp cinnamon
  • 1 Tbsp flax seed
  • 1/4 cup coconut oil
  • 1/3 cup of maple syrup
  • 1 tsp vanilla extract
  • 1 medium ripe banana, mashed 


  1. Preheat oven to 350 F
  2. Mix dry ingredients in a large bowl
  3. In a saucepan, heat the maple syrup, coconut oil and vanilla extract. Once warm, remove from heat and whisk in mashed bananas 
  4. Pour wet ingredients over dry ingredients
  5. Combine well with clean hands or spatula
  6. Spread mixture on two baking sheets lined with parchment paper
  7. Set timer for 11 minutes and once time has reached, shake granola. Set timer for another 11 minutes and place back into the oven until it's done
  8. Cool and place in container for storage
