Mini Birthday Cupcakes

Here's a blog post dedicated for all those sprinkle lovers out there. I made these fluffy and sweet cupcakes for my friend's birthday this past weekend. Mini cupcakes are great for parties because they're much easier to eat. No one wants to be juggling a drink and peeling off a cupcake wrapper. There is no need to reach for that boxed mix... this recipe is so easy, it's literally a piece of cake! 

Chocolate Cupcake Ingredients:

  • 1 cup of all-purpose flour
  • 1 cup of granulated sugar
  • 1/2 cup of cocoa powder 
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of coffee grounds
  • 1/2 cup of milk (any kind will do)
  • 1/4 cup of coconut oil
  • 1 egg
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup of boiling water

Directions:

  1. Preheat oven to 325 F
  2. Place the cupcake liners in your mini muffin tray. Spray lightly
  3. Add flour, sugar, cocoa, baking powder, baking soda, salt and coffee to a large bowl. Whisk until combined or use paddle attachment
  4. Add milk, coconut oil, egg and vanilla to flour mixture and mix together on medium speed until combine. Reduce speed and add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to make it nice and fluffy! 
  5. Evenly distribute the cake batter. Each cupcake liner should be about 3/4 full with batter
  6. Place in the oven for 13 minutes 
  7. Remove from oven and let cool completely 

Classic Vanilla Buttercream Frosting

Ingredients:

  • 1 cup butter, softened
  • 4 cups of icing sugar
  • 2 teaspoons of vanilla extract
  • A pinch of salt
  • 3 tablespoons of 2% milk

Directions:

  1. Place softened butter into the bowl of a stand mixer with a paddle attachment
  2. Turn mixer on medium setting and cream the butter until it is smooth, about 3 minutes
  3. Add icing sugar, 1/2 cup at a time. Once all the sugar is in the bowl, place it on the highest speed setting for about 10 seconds to lighten the frosting
  4. Add vanilla and a pinch of salt and combine until incorporated 
  5. Add the milk until the frosting has reached the preferred consistency. For firmer icing, add more icing sugar and for a softer icing, add more milk 
  6. Decorate with sprinkles!
