Funky Monkey Treat Balls

Truthfully, I was kind of getting a tired of seeing yogi bloggers post recipes for energy balls. I thought, how good can these little balls be for you? I decided to make them not for "energy" but for a little "treat" in the afternoon or post workout. After giving them a shot, they're the perfect little snack to get your dose of sweet and salty without scarifying those skinny jeans you've worked so hard to fit into.

Ingredients:

  • 1/2 cup smooth natural peanut butter 
  • 1 very ripe banana
  • 1/2 cup pitted dates 
  • 3/4 cup uncooked gluten free oats
  • 1/4 cup ground flax seed
  • 1/2 teaspoon vanilla 
  • 1/4 teaspoon Kosher salt
  • 1/4 cup goji berries
  • 1/4 cup mini dark chocolate chips (I used "Enjoy Life" brand)

Directions:

  1. Combine all of the ingredients minus the chocolate chips in a food processor and process until it forms a paste without chunks
  2. Stir in the chocolate chips
  3. Using a tablespoon, roll the mixture into small balls
  4. Store in the fridge until ready to eat
