Momofuku Milk Bar Inspired Birthday Cupcakes

I'm sure at some point while you we're browsing on Instagram, you happened to scroll across images of Momofuku Milk Bar's fluffy and adorable party cakes.  One of my friends had one ordered for her birthday this year and it was delicious so I decided to make cupcakes for my friend. A lot of the recipes I came across used Funfetti cake mixture from a box. This is totally fine but like any recipe this one is fairly simple when you just break it down in steps. These are the perfect cupcakes to celebrate a birthday and well worth the time. 

Like the Milk Bar Birthday Cake, they have four main components: rainbow vanilla cake, milk wash, buttercream frosting and birthday cake crumbs. 

Cake Directions 

  • 1 cup (2 sticks) of unsalted butter (if it's salted the cake will come out completely different so make sure to check the butter label)
  • 1 1/2 cups sugar
  • 3 tablespoons light brown sugar
  • 2 large eggs
  • 2 tablespoons of vanilla extract (Milk Bar uses imitation but use pure if you have it)
  • 3 tablespoons vegetable or canola oil
  • 2 1/2 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup of sprinkles (doesn't sprinkles make everything better!)
  1. Preheat oven to 375 F
  2. Cream sugar and butter until mixture is fluffy
  3. In a separate bowl, whisk together the flour, baking powder, and salt. On low speed, add the dry ingredients to the butter mixture in three additions, alternating with milk
  4. Fold in the sprinkles
  5. Spoon into the baking cups and bake for 20 minutes. The tops should be golden have a good spring to them

Birthday Cake Crumbs Directions

  • 1/2 cup sugar
  • 2 tablespoons light brown sugar, packed
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sprinkles
  • 1/4 cup vegetable or canola oil
  • 1 tablespoon vanilla extract
  1. Preheat oven to 300 F
  2. Combine the sugars, flour, baking powder, salt, and sprinkles and mix on low speed until well combined
  3. Add the oil and vanilla and mix again. Small clusters are a good thing! 
  4. Bake for 15 minutes at 300 F. Let them cool prior to using

Vanilla Buttercream Directions

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3 cups of powdered sugar
  • 1 tablespoon vanilla extract 
  • 1 tablespoon cream cheese 
  1. In a mixing bowl, beat the butter until it's lighter in colour and very fluffy. It will take a bit of time but don't ignore this step, it's really important
  2. Add the cream cheese and vanilla
  3. Add the powdered sugar one cup at a time. The final frosting should be fluffy but firm

Milk Wash Directions

  • 1/4 cup milk 
  • 1/2 teaspoon vanilla
  1. Just mix until well combined

Final Directions

Once everything is completely cooled, assemble this beauty by brushing the tops with the milk wash. Then spread the frosting evenly. Finally, top with crumbs and bit extra sprinkles if desired. Enjoy!
