Honey Lime Salmon and Paleo Broccoli Salad

I wanted to share this meal for three reasons: it was fast, healthy and really delicious. It's a great dish to make during the work week. Make sure you keep an eye out on timer when the salmon is in the over, it can become overdone in a matter of seconds!

Ingredients for Honey Lime Salmon 

  • 2 salmon fillets (adjust depending on number of people)
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons ground almond flour
  • 5 tablespoons honey
  • 2 tablespoons olive oil
  • Zest of 1 lime
  • 4 tablespoons of lime
  • 3 tablespoons of unsalted butter
  • 2 pressed cloves of garlic


  1. Preheat oven to 400 degrees F
  2. For brown butter sauce: melt butter in a medium saucepan over medium heat. Cook until melted while whisking constantly. Once butter has turned golden brown, about 3 minutes, add garlic, honey, lime juice, salt and pepper. Set aside
  3. Season salmon with salt and pepper, to taste. Place almond flour in a bowl. Roll the salmon in flour and drizzle with 1 tablespoon of honey
  4. Heat olive oil in a large pan over medium high heat. Add salmon to skillet and sear both sides until golden brown (about 1-2 minutes per side)
  5. Place salmon in oven and bake for 8-10 minutes
  6. Serve with browned butter lime sauce and lime zest 

Ingredients for Paleo Broccoli Salad 

  • 3/4 cup of roasted cashews
  • 1 tbsp of apple cider vinegar
  • 1/2 tsp of salt and pepper
  • 4 cups of broccoli, cut into bite-sized pieces
  • 1/4 cup red onion, diced
  • 2 pieces of natural bacon, chopped
  • 1/4 cup dried cranberries, roughly chopped
  • 2 tbsp pumpkin seeds
  • 2 tbsp of mayonnaise
  • 1 tbsp lemon juice 
  • 2 tbsp honey
  • 1/2 cup of red cabbage


  1. Mix vinegar, mayonnaise, honey, lemon juice, salt and pepper
  2. Cook bacon and set aside
  3. Chop broccoli, red onion, cabbage and cashews
  4. Place all ingredients in a medium sized bowl and mix well
