Slow Cooker Cashew Chicken

A Chinese takeout favourite but made right at home and takes only 10 minutes to prepare. The best thing about this meal is most of the ingredients you'll have already in your pantry or fridge. 


  • 1 tablespoon olive oil 
  • 2 boneless chicken breasts cut into cubes
  • Pinch of salt and pepper to taste
  • 1 cup raw cashews
  • 2 green onions, sliced
  • 1/4 cup of Bragg liquid aminos 
  • 2 tablespoons organic ketchup 
  • 2 tablespoons rice vinegar 
  • 2 tablespoon brown sugar
  • 2.5 tablespoons of garlic, minced
  • 1 tablespoon crushed ginger
  • 1/4 teaspoon crushed red pepper flakes


  1. For the sauce, combine the Bragg, ketchup, rice vinegar, brown sugar, garlic, ginger and red pepper flakes in a small bowl
  2. Heat olive oil in a large pan over medium high heat
  3. Season chicken with salt and pepper. Add chicken to pan and cook until browned, about 4 minutes
  4. Place chicken in slow cooker. Stir in sauce mixture and combine
  5. Cook on low heat for 2-5 hours. Stir in cashews and cook on low heat for another 15 minutes 
  6. Serve with quinoa or brown rice
