Slow Cooker Buffalo Chicken Meatballs with Healthy Blue Cheese Dressing

These meatballs are a healthier version to buffalo chicken wings, and super easy to make in your slow cooker. Another classic to serve at a party.

  • 1 pound of ground free-range chicken
  • 3/4 cup Panko
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 green onions, thinly sliced
  • Salt and pepper to taste
  • 3/4 cup buffalo sauce

Ingredients for Blue Cheese Dressing

  • 1/4 cup plain greek yogurt
  • 1.5 tablespoons crumbled blue cheese
  • 2 tablespoons lemon juice
  • 1 teaspoon chopped garlic clove
  • 1/2 tablespoon horseradish
  • Salt and pepper to taste

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Set aside
  2. In a large bowl, combine chicken, Panko, egg, garlic, onion powder, green onions and salt and pepper. Combine wine. Roll the mixture into about 24 meatballs
  3. Place meatballs onto baking sheet and bake for 4-5 minutes, or until all sides are browned
  4. Place meatballs into a slow cooker. Add buffalo sauce and toss. Cover and cook for roughly 4 hours on low heat
  5. For blue cheese dressing, combine all ingredients in a small bowl until smooth. Serve with meatballs when fully cooked
