Mini Pies

 I love the idea of making individual desserts for dinner parties. Instead of everyone having to take a slice of pie, it’s nice to serve your guests an individual dessert. Not only do these tiny tarts look super cute, but they're also delicious! They also happen to be the perfect dessert to make for Thanksgiving dinner. Bring them as a hostess gift to add to an existing dessert tray or to a work function for a potlatch. My favourite idea is to simply place the pies in little brown bags and write your guests name on the bag with a sharpie as a treat to bring home. You can even decorate the bag with a ribbon to add an extra touch. Enjoy!

Pie Dough

Ingredients:

  • 1 1/4 cups of all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup of unsalted butter (chilled & diced)
  • 1/4 cup of ice water

Directions: 

  1. Mix flour and salt
  2. Cut in butter so the texture is quite coarse 
  3. Stir in water (a tablespoon at a time) until mixture forms a ball 
  4. Wrap in saran wrap and place in fridge overnight (or half a day if you're short on time)
  5. Roll dough out 
  6. Use a cup or a plastic container to form small circles that will easily mold into the muffin tin
  7. Fill the muffin tin with individual pastry circles in each spot 
  8. Press the pie into the muffin tray using your clean hands  

Mini Pecan Pie

Ingredients:

  • 2 tablespoons of light cream cheese
  • 2 tablespoons of unsalted butter
  • 3 tablespoons of brown sugar
  • 1/4 teaspoon of salt
  • 2/3 cups of chopped pecans
  • 1 teaspoon of pure vanilla extract
  • 1 tablespoon of cinnamon
  • 0.5 tablespoon of nutmeg

Directions: 

  1. Combine all ingredients listed above in a bowl 
  2. Fill muffin tin with the mixed ingredients
  3. Bake at 400 degrees for 35 minutes 

Mini Pumpkin Pie 

 Ingredients:

  • 2 cups of mashed cooked pumpkins (or can use canned puree but the fresher...the better!)
  • 2 eggs, beaten
  • 3/4 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1 can of evaporated milk (12 ounce) 

Direction:

  1. In a large bowl, beat pumpkin with remaining ingredients using an electric mixer or immersion blender
  2. Pour into pie crust and add a design on top with extra dough if you wish 
  3. Bake at 400 degrees for 35 minutes 
  4. Top with fresh whipped cream (optional) 

Mini Apple Pie

Ingredients: 

  • 5 small to medium apples (peeled and chopped into small pieces. The variety of apple doesn't really matter too much. I like to choose Ontario apples because they're local and full of flavour)
  • 2/3 cup of brown sugar
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 2 tablespoons of butter 

Directions: 

  1. Peel and chop apples
  2. Mix all the ingredients together
  3. Pour into the pie crust 
  4. Make a weaved design if you wish on top of the apple mixture 
  5. Bake at 400 degrees for 35 minutes
