Gusto 101 Kale Salad (Cavolo Nero)

This kale salad is the definition of lip smacking and deliciously addicting. Brought to you by Gusto 101's restauranteur, Daniel Mezzolo. Easy to make at home but still worth it to order as a contorno at this trendy King West spot. 


  1. 4 cups of very finely chopped kale 
  2. 2 tbsp of dried cranberries
  3. 2 tbsp of toasted pine nuts 
  4. 1/4 cup of freshly squeezed lemon juice
  5. 2 tbsp of honey
  6. 2 tbsp extra virgin olive oil
  7. Pinch of sea salt or even better, truffle salt
  8. 2 slices of Serrano ham or prosciutto, finely sliced and fried until crisp
  9. 1/4 cup of freshly grated Parmesan or Pecorino cheese
  10. 1 tbsp of fresh basil, thinly sliced


  1. Combine the lemon juice, honey, EVOO, salt and mix well in a large bowl
  2. Add the kale and toss. Set aside for 20-30 mins
  3. Combine the fresh basil, 1 tablespoon of EVOO with a pinch of salt and mix well
  4. Add the cranberries, toasted pine nuts, crispy meat and 1/4 cup of cheese to the dressed kale and combine well
  5. Drizzle the basil olive oil mixture onto the salad and garnish with 1 tablespoon of grated cheese 
  6. Serve immediately
