Easy Cheesy Mac & Cheese

You know those days we're you literally can't bring yourself to do anything? We've had a couple of Sundays like that. This super simple cheesy mac and cheese will be your new best friend. It's cheap and ready in 15-20 mins.

Ingredients:

  • 2 tbs of butter
  • 2 tbs of gluten free flour (or regular all-purpose flour)
  • Fresh Basil
  • 1 teaspoon of minced garlic
  • 1/2 teaspoon of italian seasoning
  • 1/2 teaspoon of mustard powder
  • 1/2 teaspoon of paprika 
  • 1-1/4 cups of almond milk (or regular skim milk)
  • 1 cup of grated cheese (I use a combination of whatever is in the fridge!)
  • 1-1/2 cups of gluten free elbow macaroni 

Directions:

  1. Boil water for elbow macaroni 
  2. In a microwave bowl, mix butter, flour and spices. Microwave on high for 30 seconds until butter is melted.
  3. Stir well making sure all flour is combined 
  4. Microwave for another 20 seconds until the mixture begins to bubble
  5. Add milk and stir with a whisk until combined well
  6. Microwave for another 4 minutes on 7
  7. Add grated cheese and milk then whisk
  8. Pour over cooked macaroni
